Taco Tuesday: Super Simple Taco Soup

Given that we’re [hopefully] in the last few days of winter weather before summer (hey, a girl can dream) spring starts here in NC, I thought I’d have one last giant bowl of hot soup!

This recipe literally takes 15 minutes and is unbelievably easy. As if Taco Tuesday could get any easier? Ditch the chips, taco boats, salsas and guac. This soup is what your Taco Tuesday dreams are made of.

Super Simple Taco Soup

1 lb lean ground beef

1 tbsp garlic powder

1 tbsp chili powder

1 8 ounce can of tomato sauce

1 14 oz can stewed tomatos

1 can of original rotel

1 14 oz can black beans

1 can whole kernel corn

1 package ranch dressing mix

1 package reduced sodium taco seasoning mix

2 cups of water

optional: sour cream & shredded mexican cheese


1) Brown the beef over medium-high heat with garlic powder and chili powder. Drain, and set aside.
2) Dump (literally, just dump it!) everything but the beef into a large pot, over medium heat.
3) Add the beef back in and let it simmer for about 10 minutes. (You can let it simmer longer if you’d like, but if you’re as impatient as I am, you’ll be lucky to make it 5).

Pour it in a bowl, top with sour cream if you’d like, and enjoy!

PS – You can substitute chicken or turkey for the ground beef, to lighten things up.
