I remember this past November talking with my boyfriend, Nick, about our Christmas gifts. It went something like this:
Nick: Sweetheart, what do you think you’d want for Christmas this year from me?
Ashley: Actually, I’ve wanted an ice cream maker for a long time! That’d be good
Nick: ….. An ice cream maker? You will never, ever, ever use that…
Oh ye of little faith.
It might be four months later. It might have taken me a while to figure out how to use it/assemble it. BUT I HAVE AN ICE CREAM MAKER!!!!

This ice cream was honestly so creamy (thanks to heavy cream and Lord only knows how many calories), but still light and with a nice “mousse” kind of finish. If you wanted to lighten it up you could sub in a lighter cream for the heavy cream.
[But really, who cuts corners on ice cream anyway?]
Double Chocolate Ice Cream
•1/2 cup semi-sweet chocolate chips
•1 cup granulated sugar
•1 cup milk
•2 cups heavy cream
•1 teaspoon vanilla
•1/4 cup cocoa powder
1 – Heat chocolate, sugar, milk, cream, vanilla and cocoa until chocolate is melted.
2- Then, be real patient and let it cool. [Or, be like me and expedite the process via the refrigerator].
3- Pour the cooled mix into a prepared ice cream maker and freeze according to manufacturer’s directions.
